These coffees are all more lightly and progressively roasted and therefore best brewed in pour over or filter as opposed to espresso. Coffees included:

1. Colombia Los Hermanos - A 1 Star Great Taste UK 2021 winner, this Single Origin is medium/light roasted with notes of cherry, lime, brown sugar. The Honey process for this lot begins with 30 hours of anearobic fermentation of the whole cherries in small batches. The fermentation is done inside the concrete processing facility, avoiding high temperatures or sun exposure. Once the fermentation reaches 9 degrees Brix the cherries are then floated to remove foreign material and low density beans. The cherries are then pulped and taken to the drying area on open beds for a period of time.

2. Colombia Santander Manos du Mujer - “Women in Coffee” A new Single Origin for us, this coffee is natural process, bird friendly, organic and entirely run by women. We love this female forward approach to what is traditionally a very male oriented industry. This S.O. is reminiscent of juicy fruit, nougat, cocoa nibs and mixed berry jam.

3. Guatamala Antigua Bella Carmona LPZ - Luis Pedro Zelaya has earned a lot of attention around the cupping table among coffee professionals. Four generations of Guatamalen coffee culture has cemented his path. His reputation for combining this tradition with precise farm management and post harvesting practices has earned him many accolades. This coffee packs a sugar cane punch, with soft tanins, clean aftertaste with a warming mouthfeel. Simply amazing.

4. Ethiopia Wush Wush - named after the experimental fermentation process, this heirloom natural coffee sings of floral notes, grape and milk chocolate. Roasted medium/light it works both as a brewed/pour over and even as an espresso.
